Chocolate Zucchini Muffins

Ingredients

  • 1 Tbs. ground flaxseed
  • 3 Tbs. water
  • 2 tsp. apple cider vinegar
  • 1 cup whole wheat pastry flour (can use spelt)
  • 1 cup oat flour
  • 1/2 cup Sucanat, or coconut sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. sea salt
  • 3 Tbs. pure maple syrup
  • 1 tsp. pure vanilla extract
  • 1/3 cup mini dark chocolate chips
  • 2/3 cup walnuts, chopped
  • 1 1/4 cup zucchini, shredded and lightly packed

Instructions

  1. Preheat oven to 350ºF and lightly grease muffin tin with coconut oil.
  2. Stir together flax seed and water; set aside.
  3. Combine milk and vinegar; set aside.
  4. Combine flour, sugar, cocoa powder baking powder, baking soda, and salt.
  5. To the bowl with milk and vinegar, add flaxseed mixture, maple syrup, and vanilla.
  6. Add to flour mixture and stir until just combined.
  7. Fold in chocolate chips, walnuts, and zucchini; don't over mix
  8. Spoon batter into prepared muffin tin; fill 3/4 full.
  9. Bake 15 - 17 min.; toothpick inserted in the center should come out clean.
  10. Cool on rack.
  11. Don't eat them all!
