Noodle Bowl with Thai Almond Sauce

Ingredients

    FOR THE THAI ALMOND SAUCE:
  • 1 large clove garlic
  • 2 Tbs. toasted sesame oil
  • 3 Tbs. almond butter
  • 3 Tbs. fresh lime juice
  • 1/8 tsp. ground ginger
  • 2 Tbs. tamari
  • 1 Tbs. maple syrup
  • 2-3 Tbs. water
    FOR THE SALAD:
  • 4 oz. wheat or rice spaghetti noodles broken into 3" pieces
  • Extra-virgin olive oil
  • 1 16 oz. bag frozen shelled edamame
  • 1 red bell pepper, diced
  • 1/2 seedless cucumber, diced
  • 1 carrot, julienned
  • 4 green onions, chopped, plus more for serving
  • Sesame seeds, for serving

Instructions

    THAI ALMOND SAUCE:
  1. In a food processor combine all the ingredients and blend until smooth.
    THE SALAD:
  1. Cook the noodles according to package (don't overcook).
  2. Drain and rinse with cold water.
  3. Transfer to large bowl and toss them with a drizzle of olive oil.
  4. Add remaining ingredients except green onions (for serving) and sesame seeds.
  5. Toss until well combined.
  6. Add desired amount of almond sauce and mix in. Store remaining dressing in refrigerator.
  7. Portion salad into four bowls and garnish with sliced green onions and sesame seeds.
