The MPB

It has it all: protein, carb, and healthy fat wrapped up in one!

Ingredients

  • 1 tsp. grape-seed oil
  • 1-2 eggs
  • 1-2 handfuls spinach
  • Ezekiel english muffin
  • avocado spread
    For the spread
  • avocado
  • 1 small lime
  • 1/8 tsp. sea salt
  • 1/8 tsp. onion powder
  • 1/8 tsp. garlic salt

Instructions

    Avocado spread
  1. Mix all ingredients in small food processor or mash in bowl
    For the sandwich
  1. Heat grape-seed oil on medium high
  2. Cook egg(s)
  3. Toast english muffin
  4. Set egg aside, and turn heat to low
  5. Add 1-2 handfuls spinach and sauté until wilted
  6. Layer muffin with avocado, egg, and spinach
