Infamous Nutty Granola

There have been many requests for this recipe which is strongly based on Angela Liddon's nutty granola from "Oh She Glows". Good fats (all the nuts) reign supreme. One to two thumb size serving is recommended.


  • 1 cup whole raw almonds
  • 1/2 cup raw walnut halves and pieces
  • 1 cup rolled oats (gluten free works)
  • 1/2 cup buckwheat groats
  • 1 scoop vanilla protein powder
  • 1/2 cup dried fruit (raisins, cranberries, cherries)
  • 1/2 cup raw pepita (pumpkin) seeds
  • 1/4 cup raw sunflower seeds
  • 1/2 cup shredded unsweetened coconut
  • 2 tsp. ground cinnamon
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/4 cup water


  1. Preheat oven to 275ยบ. Line baking sheet with parchment paper or silicone mat.
  2. Process 1/2 the almonds in food processor (Vitamix works great) for 10 sec. Transfer to bowl.
  3. Combine remaining almonds and walnuts in food processor. Process for 5 sec. There should be some larger pieces in the powdery meal. Add to bowl.
  4. Add oats, buckwheat, groats, protein powder, dried fruit, pepita seeds, sunflower seeds, coconut, and cinnamon, stir until combined.
  5. Combine maple syrup, melted oil, and water. Stir into nutty mixture.
  6. Spread onto baking sheet. Cover with parchment paper and compact with rolling pin.
  7. Bake for 20 min., then rotate pan and bake for an additional 18-25 min.
  8. Let cool 1 hour. Break up into chunky pieces.
